Right now, I’m hungry – very hungry. I want something light-ish or at least with not too abrasive a flavor (like pork or spaghetti). Right now, I’m shooting for something creamy and cheesy (kinda like Campbell’s Cheesy Chicken Noodle Supper Bake). I made a pot pie the other day that was pretty good, but we don’t have any cream-of-anything soup in the house.
Here’s (some of) what we do have:
chicken
ham
mild cheddar
2% milk
flour
spaghetti noodles
macaroni
vegetables
margarine
shortening
eggs
bouillon cubes
chicken gravy mix
ketchup
mustard
BBQ sauce
soy sauce
Rice Roni
potatoes
Saltines
Shake N Bake
seasoning salt
chicken seasoning
minced onion
oregano
paprika
garlic
MSG
and some other stuff…
So… what kind of creamy cheesy chicken dish can I pull of with this? And how? Your recipes would be greatly appreciated.

What can I cook in a hotel?
Filed Under Spaghetti Sauce Recipes | 6 Comments
Here’s my dilemma. I travel a lot for work. Currently I’m stuck in a hotel with no access to a kitchen. I really sick of take-out and fast food, plus I miss cooking when I’m away from home. I need recipe ideas that I can make in my hotel room. The fewer ingredients the better, as I also don’t have a fridge here (I do have a cooler, but it doesn’t have a whole lot of space). I’d like to try and eat healthy, since that’s hard to do when your traveling, but if it something really tasty that’s good too. If it’s both, that’s even better.
Here’s what I have to cook with:
-1 single element electric burner.
-1 non-stick large pot
-1 grocery store within walking distance that I can get just about any staple item from, but it’s in the middle of nowhere, so I’m guessing exotic/ethnic ingredients are out (they also have limited produce except for basics like apples, lettuce, ect…).
-1 Strainer and 1 Spoon. I’m sure I can buy a knife for chopping next door if I need to.
-I do not have a microwave (and the hotel doesn’t have a communal one either), but I might be able to borrow a toaster oven…maybe.
So, I need easy recipe ideas that I can make in one pot with a single element burner. And I’m hoping someone can come up with something a bit more creative than spaghetti with sauce.
***DON’T Say Mac & Cheese. I’ve made that so many times I could barf if I ate it again. Also, I have tried the pre-packaged stir-fry things in the freezer isle at the Grocery store. They’re good, but kind of expensive.
Well sugar pie, if it were up to me, I would be staying in a hotel with a fridge and microwave, but my company sent me to this one. I’m not paying for it, so it’s not really my choice. Plus, like I said, I’m currently in a town in the middle of nowhere. I think I actually *am* at the “swankiest” hotel in town.
Thank you mountain baby for the concern, however you’ve failed to realize that fire codes differ from state to state, and in this state it is not against any kind of fire code to cook in a hotel room.
In addition to that, I asked permission when I checked in, and they said it was fine as long as I unplugged the element when I wasn’t cooking on it.
So, back to the question that was actually asked…..

In your family, is Granny’s cookin’ ALWAYS the best?
Filed Under Spaghetti Sauce Recipes | 9 Comments
My grandma was 1 of the BEST cooks in the WHOLE WIDE WORLD! I miss her so much. She cooked this recipe, called EGG STEW. Family members would LITERALLY FIGHT over this meal! She cooked the best gumbo (I’m from New Orleans), the best spaghetti & meat sauce, the best red beans & rice (besides Popeye’s LOL)…Just the best EVERYTHING!

I’m going grocery shopping tomorrow and I want to make different dinners this week. We usually eat tacos, skirt steak, fried chicken/fish, meatball subs, spaghetti, and fried pork chops.
Does anyone have a recipe for homemade chicken and dumplings? My mom used to make it and the dumplings were big, moist and fluffy on the inside. My friend makes it using cream of chix soup but I remember it as more of a broth with dumplings instead.
Also, does anyone make Porkchops w/cream of mushroom soup in an oven bag? I had made it years ago and I remember the soup would turn into a porkchop sauce and the chops would turn out “fall-off-the-bone” tender.
Please list any yummy recipes! I enjoy cooking meals from scratch so don’t hold back on a recipe (I’m not one of those quick fix/shortcut meals kinda mom)
Thanks for the help and please list the ingredients I’ll need to buy.

I found this recipe online for Chicken Tetrazzini. I’m no gourmet chef or anything so I just wanted to get opinions on whether this sounds good or not. I will probably add some celery in addition to the mushrooms and I’ll probably do bread crumbs on top. I made a Tetrazzini a long time ago and I no longer have the recipe, but when I made that one I’m pretty sure I used cream of mushroom soup and cream of chicken soup. Any suggestions on whether I should substitute the light cream with anything like that? Let me know opinions! Thanks!
Ingredients:
3 to 4 cups cooked chicken
salt and pepper
8 ounces fine noodles or spaghetti, cooked and drained
6 tablespoons butter
8 ounces sliced mushrooms
1/4 cup all-purpose flour
1 cup light cream or half-and-half
2 cups chicken broth
1/4 cup dry sherry
1/3 cup grated Parmesan cheese
paprika, optional
Preparation:
Preheat oven to 425°.
Cook spaghetti or noodles according to package directions. Meanwhile, in skillet, melt 2 tablespoons butter over medium-low heat; sauté sliced mushrooms until golden. In a saucepan, melt 1/4 cup butter; stir in flour, and 1/2 teaspoon salt. Stir until smooth; add chicken broth and cream. Cook, stirring, until sauce is thickened. Add chicken, cooked mushrooms, and sherry; heat through. Place noodles or spaghetti in a buttered baking dish; pour on sauce. Top with Parmesan cheese and sprinkle with paprika. Bake at 425° for 15 to 20 minutes, until hot and bubbly.
Chicken tetrazzini serves 8.
Haha yeah, chefgirl on one of the reviews on the website where I got it they said they had used it with their leftover Thanksgiving turkey…I bet that would be excellent as well!
